The maceration of selected lemon peel in neutral alcohol is the technique behind this Mediterranean-style Limoncello made in Spain. At 25% ABV in a 700ml bottle, the result in the glass is fresh, digestive and clean: lemon leads from start to finish with an aromatic presence that recalls freshly peeled citrus skin, without the bitterness of the pith and with just enough sweetness to make the whole thing enjoyable.

Serve it very cold straight from the freezer, in a small glass, exactly as tradition from its Italian inspiration dictates. It also works as a component in citrus cocktails, drizzled over sorbets or as a finishing touch in lemon-based preparations where a note of alcohol and aroma is wanted.
