The casks used by Cardenal Mendoza for its solera ageing are not ordinary barrels: they previously held Pedro Ximénez and Oloroso Sherry, two Jerez styles that leave concentrated sugar, dark fruit and an intense memory of oak in the wood. That enriched-barrel profile, combined with copper pot still distillation, is what sets this 700ml Brandy de Jerez at 40% ABV apart from other brandies in its category.

This is a glass to drink slowly, after a meal, without hurrying and without mixing. The 700ml bottle deserves service in a wide glass that allows the aromas to unfold; try warming it briefly between your hands if you want the toasted and fruit notes to emerge earlier.
